Mac Yum: Veggie Quiche

VEGGIE QUICHE

Cook and eat fresh or prep ahead of time and place into air-tight container for a quick healthy breakfast on the go!

NEED:

  • 8 eggs

  • Splash of milk

  • Veggies (We love mushrooms, fresh spinach, and onions)

  • Cheddar Cheese (Try feta sometime too!)

  • Meat (Bacon, Turkey Bacon, Sausage, Ham, etc)

  • Land o’ Lakes Fat Free Half & Half

  • Olive Oil

  • Cupcake pan

PREP:

  • Prep veggies (cooked or raw is your choice; we love them raw for extra crunch)

  • Mix eggs and big splash of milk (for fluffiness), a splash of half & half, and cheese (handful) and meats (cheese and meats optional).

  • Spray Olive Oil into pan

  • Use ladle to scoop up mixture to place in cupcake pan

COOK:

  • Cook on 350 for 20-30 minutes. Let cool completely and they will pop out pretty easy.
